Recipe: Mini French Onion Soup
Serves 6
Wine Pairing: 2022 Docker Hill Vineyard Pinot Noir
Ingredients- Homemade Crouton Topping:
1 French baguette
Extra-virgin olive oil
Directions:
1. Preheat oven to 425 degrees F. Cut French baguette into slices.
2. Place on a baking sheet and drizzle with olive oil.
3. Bake in oven for 6 to 8 minutes, until slightly brown and crunchy. Set aside.
Ingredients- French onion soups
3 large onions, thinly sliced
3 tablespoons unsalted butter
2 teaspoons flour
4 cups beef stock
¼ cup red wine (Dutton-Goldfield Pinot Noir!)
1 cup Gruyere cheese, shredded
½ cup Parmesan cheese, shredded
Pink Himalayan salt
Freshly ground pepper
Fresh sprig of thyme
Directions:
1. Melt butter in large Dutch oven or pot. Add onions and sauté until slightly colored. Stir in flour and cook until the onions are darker brown. Add beef stock and cover pan. Simmer for 30 minutes.
2. Laddle soup into small ramekins or bowls. Place homemade crouton on top and pour a little soup liquid over the top. Sprinkle croutons with grated Parmesan cheese, followed by Gruyere, evenly dividing among the ramekins.
3. Place ramekins on a baking sheet and put under broiler for a few minutes until cheese is melted and golden brown. Watch the soup closely so you don’t burn the top.
4. Sprinkle a little fresh thyme on top and serve alongside a glass of Dutton-Goldfield Docker Hill Pinot Noir!
