Recipe: Apple Quinoa Salad with Roasted Chicken
Serves 4
Wine Pairing: 2024 Dutton-Goldfield Shop Block Pinot Blanc
Ingredients:
2 cups cooked (grilled or roasted), chicken breast or thighs, sliced
½ cup quinoa
4 cups favorite mixed greens: little gems, mixed greens, baby arugula
2 apples, sliced (Granny Smith for tartness)
¼ cup fresh mint leaves
¼ cup toasted walnuts
¼ cup crumbled goat cheese or feta
Dressing:
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp honey
Salt & black pepper, to taste
Directions:
1. Make the Dressing: In a small bowl, whisk together olive oil, vinegar, lemon juice, Dijon mustard, honey, salt, and pepper. Adjust seasoning to taste.
2. Cook the quinoa according to the package directions. Once cooked, fluff with a fork and let it cool.
3. Assemble the Salad: In a large bowl, combine mixed greens, chicken, quinoa, apple slices, mint leaves and nuts.
4. Dress & Toss: Drizzle the dressing over the salad and gently toss to combine.
5. Garnish: Sprinkle with goat cheese Enjoy with a chilled glass of Dutton Goldfield Pinot Blanc!
