Grilled Ribeye Steaks, Cowboy Luxe Mac & Cheese, Simple Green Salad
Serves: 4
Grilled Ribeye Steaks
Ingredients:
4-12 ounce ribeye steaks OR 2 larger bone-in ribeye steaks
2-4 tablespoons Cowboy seasoning (see recipe below)
Directions:
1. Take steaks out 30–45 minutes before cooking
2. Pat steaks completely dry. Season generously with the Cowboy seasoning on both sides.
3. Heat grill to high (450–500°F). Place steaks on grill and sear 2 to 3 minutes per side. Turn heat down to medium, close lid and finish until desired internal temp.
4. Once steaks to desired temperature, remove from grill and set aside to rest.
Cowboy Luxe Mac & Cheese
Ingredients:
8 oz dry elbow macaroni
2 tsp salt
4 tbsp unsalted butter
¼ cup all-purpose flour
2 cups milk
1 tbsp cowboy seasoning blend
1 tsp Dijon mustard
1 cup sharp cheddar
1 cup Gruyère
¼ cup smoked gouda
¼ cup Parmesan
Crispy Cowboy Topping
⅔ cup panko breadcrumbs
1 tsp cowboy seasoning blend
2 tbsp unsalted butter, melted
4 strips bacon, cooked and crumbled (highly recommended with ribeye)
Homemade Cowboy Seasoning (leftovers great for any grilling!)
2 tbsp sea salt
1 tbsp coarse black pepper
1 tbsp smoked paprika
2 tsp garlic powder
2 tsp onion powder
1 tsp chili powder
1 tsp mustard powder
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp ground cumin
Directions:
1. Cook Pasta: Boil in well-salted water until al dente. Drain and set aside.
2. Make the Sauce: Melt butter over medium heat. Whisk in flour and cook 1–2 minutes. Slowly whisk in milk then add 1 tablespoon of cowboy seasoning and Dijon mustard. Simmer and whisk until thickened, about 3-5 minutes.
3. Reduce heat to low and stir in the cheeses gradually until smooth. Taste and season with more salt and black pepper if needed.
4. Fold pasta into sauce and slowly stir to combine. Pour into a buttered/oil spray 8 x 8 baking dish.
5. Making the topping: Mix panko, cowboy seasoning and melted butter. Sprinkle topping evenly over mac & cheese and then top with crumbled bacon.
6. Bake at 375 for 20-25 minutes and then broil 2-3 minutes at the end for a golden, crispy crust.
Easy Fresh Garden Salad
Ingredients:
Mixed greens (romaine + spring mix)
Cherry tomatoes (halved)
Cucumber (sliced)
Red onion (thinly sliced)
Carrots (shredded or sliced)
Simple Dressing
3 tbsp olive oil
1 tbsp red wine vinegar (or lemon juice)
1 tsp Dijon mustard
1 tsp honey
Salt & pepper
Shake or whisk until emulsified
