Mushroom & Caramelized Onion Dip
Ingredients:
1 tablespoon olive oil
1 tablespoon butter
2 large yellow onions, thinly sliced
10 oz cremini or baby bella mushrooms, finely chopped
2 cloves garlic, minced
1 teaspoon fresh thyme (or ½ tsp dried)
½ cup Greek yogurt or sour cream
4 ounces cream cheese, softened
¾ cup grated Gruyère
¼ Parmigiano-Reggiano
Salt & black pepper, to taste
Optional finish: a splash of Dutton Goldfield white wine
Italian parsley, chopped, to add after baking for a pop of color
Directions:
1. Heat 1 tablespoon of each olive oil and butter over medium-low heat. Add onions with a pinch of salt. Cook slowly, stirring occasionally, 25–30 minutes until deeply golden and Transfer to a bowl.
2. Preheat oven to 400. Increase heat to medium and cook mushrooms until their moisture evaporates and they turn golden, about 8–10 minutes. Add garlic and thyme; cook 30 seconds. Deglaze with wine if using; cook until dry.
3. In a bowl, combine onions, mushrooms, Greek yogurt or sour cream, cream cheese, Gruyère, and Parmigiano-Reggiano. Season well with salt and pepper.
4. Transfer mixture to a lightly greased small baking dish or skillet. Top lightly with extra Parmigiano-Reggiano if desired.
5. Bake 18–22 minutes until hot, bubbly and brown on top. Let cool 5 minutes before serving—this helps the flavors settle. Sprinkle Italian parsley on top and seve.
